YIELD: about 30 biscuits PREP TIME: 10 minnutes COOK TIME: 10 minutes



1/2 cup unsalted butterat room temperature

1 large egg

3/4 cup mashed ripe bananas (about 2 medium)

1 1/2 teaspoons pure vanilla extract

1 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

2 teaspoons ground cinnamon

1 cup semi-sweet chocolate chips


Preheat oven to 350°F. Line baking sheets with parchment paper.

In the bowl of a stand mixer fitted with the paddle attachment, or in a big bowl using an electric mixer, beat the butter and sugar until light and fluffy, about 3 minutes.

Scrape the sides of the bowl and then mix in the egg until completely incorporated. Scrape down the sides of the bowl again and add the mashed bananas and vanilla.

In a medium bowl, whisk together the flour, baking soda, salt and cinnamon.

Gently add the bread mixture to the banana mixture and blend until just blended.

Scrape down the sides of the bowl and stir to recombine.

Use a moderate cookie scoop (approximately 1.5 tablespoons) to scoop the dough onto prepared cookie sheets leaving about 2 inches between each cookie.

Bake in preheated oven for about 9-11 minutes.

Remove cookies from the oven and gently press the shirts of each cookie with the base of a drinking glass. Since these cookies don't spread considerably, this will help give them a conventional cookie shape.
